Banoffee scan bran cake

Ingredients

5 scan bran

3 eggs

banana & custard muller light

3 tbsp quark

4 tbsp sweetener

options toffee sachet

Method

1) Cover the scan bran with hot water to soften and drain.

2) Add 4 tbsp sweetner and mix in the eggs

3) Add 1/2 sachet options and mix well.

4) Stir in the muller light.

5) Put in a microwaveable container and cook for 8 minutes.

For the topping

1) Add sweetner (to your tasting) to 3tbsp quark and mix well with the remaining options.

2) Spread on the cake once it as cooled and top with sliced banana

3) sprinkle over any remaining options powder

2 syns (for the options) + HeB choice for the scan bran (or 5 syns)

Cherry Bakewell Scan Bran cake

Ingredients

5 scan bran

4 tablespoons sweetener

1 cherry mullerlight yogurt

2 eggs

4 lids of almond essence.(5 syns for the whole cake or (b) choice.

 

Method

1) Soak the scan bran in boiling water,drain and mash.

2) Add the other ingredients mix well

3) microwave on high for 7 minutes

0 if using scan bran as an Healthy Extra or 5 syns if not an HE.

KFC style chicken (syn free using scan bran)

Ingredients
scan bran (finally grounded)
Mixed herbs
salt
pepper
paprika
beaten egg
chicken mini breast fillets

Method
1) finally grind the scan bran and add the salt, pepper, herbs and paprika.
2) coat the chicken in the beaten egg.
3) roll the chicken in the scan bran mix until fully covered.
4) place on a baking tray, spray with fry like and bake for 30 minutes on gas mark 6

Syns
If you use 5 scan bran and eat all this yourself it can be used as an healthy extra B choice making it syn free. ALternativly count 1 syn per piece of scan bran.

Suggestions
For a spicier alternative add chilli.

Not an happy bunny!

SO last night at weigh in I was not a happy bunny! 2 1/2lb gain!!! Other than 1 night out on the weekend I had stayed within syns. Even when I was out I only had vodka & diet coke and a few Jagers. Pretty much my usual (well less actually). I stayed away from cocktails and sugary drinks and the wine. Although I shouldn’t have bothered! I was not happy at all. I went home and sulked. And ate chocolate. well a ripple. even in my sulk and still did t go over syns!

ANyway I guess it as made me more determined, because now I want that gain, and more, off next week! This week i’m trying to have oat/scan bran as often as possible as my HeB choice, drink more water and have more speed foods. My planned night out is also off the agenda! I’m going to try posting more on twitter/this blog too when I can around work. Although I have a love/hate relationship with twitter at the mo. I love it, and the people on there. However I hate the app. I’me forever getting notifications I have a tweet, yet if I don’t get on the app within 30 minutes I cant find it! SOrry to all you twitter peeps who think I’m ignoring you, i’m not. I just have a stupid app. Due to work I can sometimes go 8+ hours without access to my phone or laptop so seem to be missing loads which is really frustrating. SO anyways, this week I will post more, if you message me and I don’t reply please don’t think i’m ignoring you. And in the mean time if anyone one as any suggestions for good, reliable iphone twitter apps I’d be most grateful 🙂

ANyway, to keep myself accoutable heres todays food diary:

Breakfast: 1/4 mint oat bran cake and a banana

Lunch: chicken & sweetcorn sweet chilli pasta (2 syns), pineapple & greek muller yougurt (0.5syns)

Tea: chicken & sweetcorn chilli pasta (2syns) as a snack at work & fat free supernoodles when I got home (Loooonng day at work today)

Snacks: 1 sugar free redbull, rest of the oat bran cake(tptal cake = 6.5syns & HeB) , melon, mango, pineapple and lots of water, milk (HeA)

Mint chocolate oat bran cake

 

Ingredients

5 Oat bran (5 sysns or HeB)

¼ cup of sweetner

1 oz mint options or 2 sachets of mint options (4 syns)

1 tbsp golden syrup (2 syns)

3 large eggs

 

Method

 

1)Soften oat bread with boiling water ( pour over just enough to cover the scan bread, leave to soak for a minute and or away the excess water)

2) Add the golden syrup to the scan bran, mix and allow to cool

3) Add the eggs, mint options and sweetener and mix well.

4) Microwave on full power for 6 minutes in a takeaway sized container

 

 

For an added extra naughty treat spread fluff on the top as a tasty topping (1 syn per tbsp)

Re-programming my Slimming World brain

Those of you who have read the few blog posts I did post over Christmas/ New Year / January (my birthday month) and been on my twitter (@shrinking_fairy) will most probably be aware that i did a lot of cheating over those few months. Hence the lack of blog posts too. Now I say cheating but I was about 90% on plan most weeks with the exception of my birthday week (see the honest food diary blog posts for an insight!). The reason was the sheer amount of meals out and parties. And intended to enjoy them! Thanks to loosing several dress sizes from the years previousley I actually looked forward to these events and for the chance to buy & wear new dresses. Something I despised prior to Slimming World. As a result most weeks I managed just a small loss.

Following these events I have struggled to really get my head back in the game. But finally it seems to have and i’m back to making progress 🙂 I have tried a few techniques. I’ll briefly mention these now, but I intend to elaborate on these in a future blog post (hopefully tomorrow unless the hubby as plans). FIrstly I spend a week where I tried having scan bran as my HeB as often as possible. The only way I seem to be able to eat it is by making it into a cake. What I took to doing was making it as a chocolate cake in a morning (recipe is listed in the recipe section on here). I would then cut it into small pieces and nibble on it throughout the day. This seemed to work for 2 reasons. Firstly I was eating plenty of scan bran which is linked to good losses and secondly I found it quiet filling and because i’d cut it into small pieces I found this was the only thing I snacked on as well as my main meals which as a result also minimised my daily syns. I also ate a fair bit of mushy pea curry that week. At weigh in I managed a 2lb loss which is a big loss for me. I’ve found that over time my losses have really slowed down so I was pleased with this.

Last week I also filled in daily S.A.S. logs (Slimmers Against Sabotage) which really did help as I was having to think about danger areas and plan in advance as well as recording every little thing I ate/drank. Now I always fill in  a food diary anyways which gets stuck in my scrapbook. That way I can look back over good/bad weeks and see the reasons for losses/gains. I also have photos in their to show my progress over time which is a real motivator. These are two things I plan on discussing further so i’ll not go too much into them now. Again the S.A.S. log seemed to have an impact as I managed a 2 1/2lb loss!

 

And the best bit…..that means I got my 5st award!!! 🙂 🙂 🙂

Scan bran ‘Ferero Rocher’

Ingredients
8 Scan Bran (4 syns)
4 TBSP Nuttella (16 syns)
2 TBSP Golden Syrup (3 syns)

Method
1) Melt the Nuttella and Syrup together.

2) break the Scan Bran into tiny crumbs and mix together with the Nutella and Golden syrup.

3) Mould into smalls balls and refrigerate.
23 syns for the total divided by however many ‘Ferero Rochers’ you make (approx 30 = just under 1 syn each)

Chocolate scan bran cake


 

Ingredients

5 scan bran (5 sysns or HeB)

¼ cup of Candarel sweetner

1 oz cocoa (4 ½ syns)

1 tbsp golden syrup (2 syns)

3 large eggs

 

Method

 

1)Soften scan bread with boiling water ( pour over just enough to cover the scan bread, leave to soak for a minute and or away the excess water)

2) Add the golden syrup to the scan bran, mix and allow to cool

3) Add the eggs, cocoa and sweetener and mix well.

4) Microwave on full power for 5 minutes in a takeaway sized container

 

 

For an added extra naughty treat spread nutella on the top as a tasty topping (4 syns per tbsp)

Curly Wurly scan bran cake

Ingredients:

4 Scan Bran

2 eggs

3 or 4 tbsp sweetener

1 sachet Belgian Choc Options

26g Curly Wurly bar

Method:

Soak the Scan Bran in boiling water to soften. Then drain and mash.

Beat the eggs and stir into mix, along with the sweetener and Belgian

Choc Options Chop the Curly Wurly into pieces and add to the mix

Pour the mixture into a microwavable bowl and cook for around 6 minutes. When cooked the cake will be springy to the touch and will have pulled away from the side.

You can cook the cake on 200°C/Gas Mark 6 for approximately 30 minutes.

Syns= curly wurly (6 syns), Belgian Chocolate Options (2 syns), 4 x Scan bran (4 syns if not using as a HeB)

Total syns = 12 or 8 + 1 HeB
